The grapes for this wine were harvested from a single vineyard, Standing Stone, located on the southeastern side of Seneca Lake at 24.8º brix. Standing Stone Vineyards prioritizes vineyard health as essential to winemaking. Their biodynamic practices foster biodiversity in the Finger Lakes Region, leading to resilient vineyards and exceptional wines. This wine captures the essence of the vineyard's unique site.
The vines had been lightly impacted by Botrytis, more affectionately known as "noble rot", thanks to misty fall mornings followed by warm and sunny afternoons in the vineyards through the 2023 growing season. The extended ripening period allows for the development of concentrated sugars and flavors, creating a beautifullly balanced and complex dessert wine.
This late harvest Cayuga White showcases a luscious sweetness balanced by vibrant acidity. This partially botrytized wine features lush honeyed notes and crisp acidity underscored by notes of Granny Smith apple. The palate is decadent and smooth, with a long, elegant finish.
