2022 GRÜNER VELTLINER Skin Ferment
Our limited-production Skin Ferment Grüner Veltliner is a bold and bright dry white wine. Of the many tools at a winemaker's disposal, Head Winemaker Dan Bissell employed an initial period of extended maceration to harness the potential of the exceptional lot of Grüner Veltliner we cultivated from the 2022 harvest. This technique was used to extract additional aromas and texture from this Austrian varietal, resulting in a wine characterized by deep flavors and intense floral notes.
Invigorating aromas of coriander, white pepper, and the slightly sweet zest of Meyer lemons jump out of the glass and delight the senses. These combine with flavors of tangerine and earthy, spicy notes from the extended skin contact. Medium structure and round mouthfeel are complemented by a bright finish for this incredibly food-friendly wine.
Grüner’s fuller body and refreshing acidity provide an opportunity to pair with heavier dishes. Incorporating flavors like ginger, coriander, cumin, and lemon into hummus, tabouli, or baba ganoush will compliment similar flavors in the wine. We recommend trying our Skin Ferment Grüner with olive oil poached salmon, cheese, or chicken roasted with oranges and rosemary.
